Does WalMart buy anything locally? Just wondering.

I am still amazed by the great price for eggs from well treated chickens.

Greenie, maybe you can help dori connect with your farmer so she can get those good eggs, too! When the middle person is eliminated, it seems everything is cheaper.

Mother Earth News recently conducted a test comparing free range (pastured in movable pens) eggs to factory produced USDA eggs. When compared to factory grown eggs, free range eggs have, on average:

• 1⁄3 less cholesterol
• 1⁄4 less saturated fat
• 2⁄3 more vitamin A
• 2 times more omega-3 fatty acids
• 3 times more vitamin E
• 7 times more beta carotene

It's kind of hard to get too worked up over the treatment of animals we eat, but I can see this problem from a pragmatic perspective: animals kept in such conditions are far less healthy, obviously, and therefore far more inferior in quality than animals kept in free-range conditions and fed on their natural foods.

Simply put, a chicken kept in an open environment and allowed its natural diet is a far better meat animal than an undernourished one cooped up in a cage and wallowing in its own filth. According to this web site, "[c]hickens are omnivores". They eat grass, other edible plants, and insects they dig up from the ground.

I think if we're going to be discussing the ethical treatment of meat animals, and convince others, we need to approach it from this angle. The costs of factory farming as opposed to small, family-owned farms that use natural fertilizers, feed and pesticides should be discussed from an economic basis. I think it's worth trying.

Eggs come in all sorts of colors. Having shopped at Whole Foods Market,, I can tell you right now that there are speckled hen's eggs, green-shelled eggs with shades ranging from slightly off-white to more verdant pastels, and with the emu eggs a dark green. I've even seen bluish chicken eggs! It all depends on the breed. Ameraucanas are the ones that come in bluish or greenish tints.
