BABY RED "SMASHED" POTATOES


Take a bag of the "baby red" potatoes," wash them thoroughly, put them in the microwave with some salted water and cook them until they're just tender. Drain the cooked potatoes, put them on a cookie sheet that has been coated with some olive oil, and "smash" them with the flat bottom of a thick water glass or a potato masher.

Next, drizzle olive oil over the potatoes along with a bit of garlic powder, some dried or fresh herbs, (I use rosemary and basil), a bit of salt, and freshly ground black pepper. Bake them in a 400 degree oven for 15 - 20 minutes. Watch them because they "crisp" rather rapidly and the time varies with different ovens. You can also use a lower temp, but the baking time will take longer. Either way, the potatoes become crisp, yet tender, which is what you want.

They're very, very good, and a bit different from other ways of preparing potatoes.
