That fudge picture made me hungry. :P
That's a new piece of info for me too, and I'll be sure to 'celebrate.' Anyone have some good recipies? I'll share one of mine... I'd like to try something new, so hopefully someone has a good fudge recipie or something.. :D


Chocolate Mousse Pie

-1 package of 12oz semi-sweet choc. chips
-6 eggs
-1/4 cup sugar
-vanilla extract
-1 1/2 cups heavy cream

Start by chilling a bowl in the freezer.
Melt chocolate in bowl. (I usually put it in the microwave-don't let it burn, though.) Seperate the 6 egg whites and yolks. With a mixer, mix the yolks until thick and creamy. Gradually beat melted chocolate into egg yolks.
Wash the beater.
With the mixer, mix egg whites until completely foamy. (Make sure it's not runny). Gradually add 1/4 cup of sugar. Beat in 1 tablespoon of vanilla.
Get your chilled bowl and beat the heavy cream until it's stiff. Slowly mix the chocolate/yolks and heavy cream until very smooth. Use a spoon to fold in the egg whites until there's no streaks.
Pour mixture into your favorite pie crust. I like using the Oreo Crust.
Refridgerate for 2 hours, and enjoy! It's soooo good.

Classic Fudge

Yield: 25 pieces
2 ounce(s) 60% Cacao Bittersweet Chocolate Baking Bar
2 cup(s) Semi-Sweet Chocolate Chips
14 fluid ounce(s) sweetened condensed milk
2 1/2 teaspoon(s) pure vanilla extract
1 cup(s) chopped pecans or walnuts

Directions
Line an 8-inch square baking pan with waxed paper. Place chocolate chips, bittersweet chocolate, and sweetened condensed milk in a double boiler over hot, but not boiling, water. Stir the mixture occasionally until the chocolate has melted. Stir in the vanilla extract and nuts. Spread fudge evenly in prepared baking pan. Refrigerate for 2 hours, or until firm. Cut when cool and firm. Store uncovered in the refrigerator.

Chocolate Chip Cheesecake
Yield: 12 servings

1 1/2 cup(s) Semi-Sweet Chocolate Chips
2 cup(s) chocolate sandwich cookie crumbs (about 35 cookies)
6 tablespoon(s) butter, melted (3/4 stick)
24 ounce(s) cream cheese, at room temperature
3/4 cup(s) powdered sugar
3 large eggs, at room temperature
1/3 cup(s) whipping cream
1 tablespoon(s) vanilla

Directions

Crust: Crumble the sandwich cookies into a food processor or blender, and grind briefly. In medium bowl, combine crushed cookie crumbs and melted butter. Mix well. Spoon the mixture into a 10-inch springform pan. Using your fingers or the back of a spoon, pat the mixture into bottom and 1 inch up sides of pan. Freeze prepared crust 15 to 30 minutes while preparing cheesecake filling.

Filling: Place oven rack in center of oven and preheat to 325°F. Blend cream cheese and sugar 3 minutes on medium-high speed. Turn mixer down to lowest speed; add eggs one at a time, mixing thoroughly after each. Scrape sides of bowl. Add whipping cream and vanilla; beat on medium-high for 3 minutes. Pour 3/4 of cream cheese filling into crust. Sprinkle chocolate chips over batter, then pour remaining cream cheese filling over chips.

Bake cheesecake for 1 hour and 15 minutes at 325°F. Turn off oven; leave cake in oven with door closed for 1 1/2 hours. Refrigerate at least 8 hours before serving.

I used to make this cheesecake at least once a week for my son before he went into the Army. He said he had to have enough to make him remember it during all of boot camp! :P
