I attended a workshop one day last week which included a luncheon made up of a variety of salads. One of the workshop participants brought a delicious brocolli salad. It contained a rather strange combination of ingredients. Here's the recipe:

Serves 6 to 8

6 cups Organic Broccoli florets (uncooked)

1 cup thinly sliced Organic Celery

1/2 cup Organic Raisins

1/4 cup salted sunflower seeds (or pecans)

1/2 cup mayonnaise

1/4 cup plain, non-fat yogurt

2 tablespoons apple cider (or white) vinegar

1/3 cup sugar or honey

Combine the broccoli, celery, raisins, and sunflower seeds in a large bowl and stir to combine.

Make the dressing by whisking the remaining ingredients in a small bowl until smooth.

Add to the broccoli mixture and toss well. Refrigerate salad at least 2 hours before serving to allow flavors to blend.
